Barley frise represent a classic and tasty variant of the traditional Apulian friselle. Barley, one of the oldest foods in the world, is known for its extraordinary nutritional and beneficial properties. These friselle are particularly rich in mineral salts such as potassium, calcium and iron, and also provide an abundant quantity of fibre, useful for promoting the normal functioning of the intestine. These frize are not only a healthy food, but also a product of the Apulian peasant tradition with significant historical roots. According to legend, it is said that the frize were brought to Puglia by Aeneas, the hero of Homer’s Aeneid, when he landed in what is now Porto Badisco, a seaside town in the Adriatic Salento located south of Otranto. Barley frize can be enjoyed in various ways: dipping them briefly in water and then seasoning them with fresh cherry tomatoes, extra virgin olive oil, and basil, or using them as a base for various salads.
