National Green Lentils are among the oldest legumes known to mankind, with traces of the first cultivation dating back to 7000 BC in the area of southwest Asia. Since then, these small legumes have spread throughout the Mediterranean basin, becoming a fundamental food for many cultures. It is said that the name of the noble Roman family Lentuli derives from the Latin word “lens”, meaning lentil, underlining the historical importance of this legume. Among the best-known varieties of green lentils is the Gigante di Altamura, grown with passion in Puglia. This variety is distinguished by its larger size compared to common green lentils and has a hay green color. Its flavour is intense and persistent, and thanks to its ability to maintain its shape after cooking, it is ideal for preparing flavourful soups and broths. It is recommended to soak the lentils for at least 8 hours before cooking, to obtain a perfect consistency and facilitate digestion. Other varieties of green lentils, such as those from Castelluccio di Norcia, have obtained the prestigious PGI mark, and are recognized for their small size and particularly aromatic flavor. These lentils are perfect in salads or as a side dish for traditional dishes, such as cotechino.
