Spaghettoni Cappelli are made from Senatore Cappelli durum wheat flour, grown in the Lecce hinterland. This variety, selected by Nazareno Strampelli in 1915 and named after Senator Raffaele Cappelli, is one of the best expressions of the Salento tradition.
