The chickpea (Cicer arietinum, L. 1758) is an ancient plant, native to Western Asia, and is the third most important grain legume in the world, immediately after the bean and the pea. Its dry seeds, rich in proteins that vary from 15% to 20%, offer a very high food quality, making them a precious ingredient in the kitchen. To prepare the traditional “pignata”, the chickpeas must be rinsed and then cooked over low heat for about 2 hours (or 50 minutes in a pressure cooker) until they reach a soft and creamy consistency.
