Tricolor Semolina Orecchiette are handcrafted with Senatore Cappelli durum wheat semolina, a grain selected in 1915 by agronomist Nazareno Strampelli and dedicated to Senator Raffaele Cappelli, a historic figure in Italian agrarian reform. Artisanal production involves the use of the whole grain, preserving the germ, rich in vitamin E and unsaturated fats with antioxidant properties. The dough is enriched with dried spinach and red beet powder, which give bright colors and a natural flavor to the pasta. These orecchiette are perfect with fresh tomato sauces, or with simple oil and garlic dressings, which enhance their flavours and consistency. To keep their organoleptic and nutritional properties intact, it is recommended to store Orecchiette Tricolore in the refrigerator.
