Senatore Cappelli Durum Wheat Flour is a product of excellence, obtained from the milling of selected and certified durum wheat, coming exclusively from the hinterland of Lecce, in the heart of Salento. This variety of durum wheat, selected by Nazareno Strampelli in 1915, bears the name of Senator Raffaele Cappelli, pioneer of the first agrarian reform and promoter of the diffusion of this prized cultivar. Senatore Cappelli is a historic variety that, for many years, found its ideal habitat in the southern lands of Italy, but subsequently risked falling into oblivion due to its low productivity, which led to a preference for more profitable crops. Despite this, this cultivar stands out for its excellent organoleptic characteristics: it is rich in high-quality proteins and shows extraordinary resistance to adverse weather conditions. In recent years, thanks to a renewed interest in agricultural products not subject to genetic mutations, Senatore Cappelli wheat has seen a return to Italian tables, appreciated not only for its nutritional properties but also for the authentic flavor and consistency it gives to baked goods.
